Peanut Butter Cookies
Ingredients:
1 cup granulated sugar
1 cup creamy peanut butter
1 egg, slightly beaten
1 teaspoon vanilla extract
Directions:
Mix all ingredients thoroughly. Drop by the teaspoonful onto baking sheet and press with fork. Bake at 325 degrees F for approximately 10 minutes. Cool before removing from baking sheet. Yields to 3 dozen.
Peanut Butter Fudge
Ingredients:
1 bag (12 ounces) milk chocolate chips
1 jar (12 ounces) crunchy peanut butter
1 can (14 ounces) sweetened condensed milk'
Directions:
Melt chocolate and peanut butter in top of double boiler. Remove from heat and stir in milk. Pour in a 8 x 8 inch pan lined with wax paper. Refrigerate to chill. Cut in 1 inch pieces. Yields 1 1/2 pounds.
Peanut Butter Truffles
Ingredients: 1 (12-oz) package semisweet chocolate morsels 1/2 cup whipping cream 3 tablespoon creamy peanut butter 3/4 cup finely chopped, lightly salted roasted peanuts Directions: Microwave the first 3 ingredients in a medium-size microwave-safe bowl at HIGH 1 to 1 1/2 minutes or until melted and smooth, stirring at 30-second intervals. Let cool 10 minutes. Then beat chocolate mixture at medium speed with an electric mixer 1 to 2 minutes or until whipped and smooth. Cover and chill 2 hours or until firm.
